Carrot Cake

225g (8oz) S/R flour

1.5 tsp baking powder

1.5 tsp bicarb of soda

1.5 tsp cinnamon or mixed spice

3 beaten eggs

175g (6oz) granulated sugar

6fl oz veg oil

200g (7oz) grated carrot

50g (2oz) chopped walnuts (optional)

50g (2oz) sultanas (optional)



125g (4oz) cream cheese

50g (2oz) softened butter

225g (8oz) icing sugar

1 tsp lemon juice


Pre heat oven to 150 C

  1. Beat eggs and sugar together (use hand mixer)
  2. Add oil
  3.  Lightly beat in sieved dry ingredients
  4. Stir in carrot and walnuts/sultanas if using
  5. Cook in a large pan (med size roasting pan for tray bakes or approx 20cm / 8” deep round)
  6. Pop in oven for approx 45 mins
  7. Turn out and cool


To make the topping

Beat together butter and cream cheese, add icing sugar and mix well, then add lemon juice

Cover top of cake and eat!
